Life Saving Quiche

I call this life-saving quiche because it is sooooo handy to have this on hand as you detox. It’s especially life-saving on the fifth day of the detox as I was feeling incredibly hungry! I seriously ate about half of the quiche after my first breakfast. Don’t be alarmed by excess hunger! It’s simply your blood sugars balancing out. Remember, as long as you are eating all the right foods on the Yes list,  this is normal. Keep eating until you are satisfied. Your body will adjust.

This is what I used this day. Quiche is a great way to use up produce.

CHOP CHOP!

Wait! Don’t throw away the stems! In my opinion, that is the tastiest part. Here is a great YouTube video on how to butcher the whole broccoli.

First I sautéed the onion for a few minuets, next I added in the  broccoli for a couple minuets more and then I threw in the rest of the veg, minus the herbs. Add S&P.

I probably sautéed the whole lot of veg for around ten minuets. It doesn’t have to be super soft because it is going to cook more in the oven.

Either transfer veg to a mixing bowl or let veg cool a bit, then crack in 8 eggs and mix it up, add fresh/dried herbs and S&P.

Life-Saving Quiche Recipe

You Will Need:

Around 4 C chopped veg

8 eggs

S&P (salt and pepper)

fresh or dried herbs

Let’s Do This!

Add Mixture to 9×13 baking dish

Bake at 350 and check on the quiche after 20 min and every 5 min until cooked through.

My recipe:

1 large head broccoli w/ stem, 3/4 onion, 2 red bell peppers, handful of brown mushrooms, sweet basil, coconut oil

Saute onion for around 3-5 min then add in the rest of veg, saute for another 5-10 min. Add S&P.

Mix in 8 eggs and add to a 9×13 baking dish and bake 20-30 min.

**Notes:

This taste great with sausage, just make sure that the  sausage is sugar free.

Of course, I added avocado and salsa 🙂

This is great hot or cold, and makes a perfect breakfast, snack, lunch or dinner!
