Chicken Salad 2 Ways

Packed lunches look different when on a sugar detox or living a paleo lifestyle. I wanted to show you guys a couple easy ideas for lunches for on the go. Chicken salad makes an easy, delicious addition to any lunch. I eat this as a salad or I bring along Romain lettuce leaves to make a salad boat. Be creative and change it up any way you like!

Chicken Salad Two Ways

Ingredients for Chicken Salad Base

2 cooked chicken breast or thighs

1/2 cup Paleo Aioli

1/4 red onion or 1 shallot, diced

2 celery sticks, diced

S&P

 

Let’s Do This!

Use a food processor with a shredder blade and add chicken until diced. If you don’t have a processor, dice chicken by hand. Add in aioli, onion, celery and S&P to your taste.

 

Variations:

Apple Rosemary Chicken

Add 1/2-1 diced green apple, chopped dried or fresh rosemary to taste and chopped walnuts or pecans. You can also add a pinch of garlic powder and a teaspoon of dijon mustard.

Curried Chicken salad

1/2-1 diced green apple, chopped walnuts, curry seasoning to taste.

*Note- If the consistency is a little too dry for your taste, add in more aioli. Adjust the seasoning to your tastebud’s desires 🙂
