Coconut Macaroons
I make these anytime I am craving a healthy chocolate treat. The healthy fat from the coconut oil makes this treat incredibly satisfying. One or two of these tasty morsels is all I need. Close your eyes and let the coconut macaroon melt in your mouth. Delish!
Raw coconut oil contains medium-chain saturated fat called lauric acid. It balances blood sugar, lowers blood pressure, protects against heart disease, and even aids in weight loss. Boom! A healthy treat! Enjoy.
Ingredients:
1 C softened pure coconut oil
3 TBS of raw cacao powder
3 TBS maple syrup
½ C unsweetened coconut shreds
1 tsp vanilla extract (optional)
Let’s Do This!
Place all ingredients in a food processor and blend until well combined. You may need to pause and scrape down the sides a few times.
Once mixed well, use a spoon and lay a dollop on a plate or cookie sheet. Repeat till mixture is out.
Makes around 12-16 Macaroons. Can store at room temperature (if it’s not too warm). Otherwise keep in fridge.
Sidenote: If you’re in a warm climate where your coconut oil is liquefied, you’ll want to put it in the fridge to harden it up a bit. Once you make these delightful treats, store them in the fridge.

Smiles, I just did the macaroons, but found myself up in the air… the recipe did not say the oven temp and how long. Also my ingredients were really runny. I figured the only dry ingredient that would bind the other ingredients was the coconut, so I added more shredded coconut. Then I remembered your comment on one of the cooking videos that the most used temp was 350 and I checked around other macaroon recipes and they said 10 min. Well…my macaroons all melted together but made a wonderful lacy, flat crisp! I love them! I’ll send you a pic! ❤️
