Wondering what to eat while on a paleo or whole foods diet? Try this veggie-filled fritatta! It is full of flavor and free of sugar, gluten, and grains. I call this the Power-up Frittata because you can taste the rich nutrients that your body needs to run at your most optimal level. Power Up!!

Power-Up Frittata

Ingredients:

1 bunch of chard

1 bunch of collard greens

1/2 to 1 sweet onion

1-2 garlic cloves

1 TBS paprika

8 eggsc

coconut oil or Ghee S&P

S&P

 

Let’s Do This!

Devein the main big stem running up the center of the chard and collard greens and tear leaves into large chunks. Steam leafs for around 10 min.

As greens are steaming, melt coconut oil in pan and saute onion on medium until soft, around 10 min. Next add in garlic and saute for another min.

Mix paprika, S&P, onion, garlic, greens and scrambled raw eggs.

Grease an 8×11 dish or pie pan with coconut oil and pour in the mixture

Bake at 350 degrees for 40-45 min

**Notes: Would also be tasty with some mushrooms! Try adding your favorite veggies and meat.
