Zucchini Pasta

Looking for a delicious grain-free pasta substitue? Try this easy-to-make whole foods zucchni noodle substitute! It’s a great way to add more vegetables to your diet, and is great for pleasing picky eaters.

Zucchini Pasta

You Will Need:

4-5 med zucchini

2 roasted red bell peppers (seeds and stems removed)

small carton of cherry tomatoes

sugar free Italian sausage

1-2 cloves garlic

olive oil

fresh herbs such as basil and Italian parsley

 

Let’s Do This!

Shred squash into small ribbons, place in colander and salt heavily.  Let zucchini sweat for 10-15 min.

While squash is sweating, cook Italian sausage.

In a food processor pulse peppers, tomatoes, garlic and 1-2 TBS of oil till desired consistency. Add sauce to cooked sausage. Heat

Add sauce to cooked sausage. Heat till warm.

Rinse “noodles” and squeeze out as much water as possible. Saute noodles until soft, around 5-10 min.

Saute zucchini noodles until soft, around 5-10 min.

Plate your “noodles”, add your sausage and red bell pepper sauce and then top with fresh herbs. Yum!

 

*Notes: I used a Veggetti spiral veggie slicer to create my zucchini “noodles” but you may also use a knife or mandolin.

Switch out the meat and try with prawns or beef!
