Pan Seared Salmon and Broc-Choy with Avocado Cream Dressing

One of the many benefits of whole food cooking is its simplicity. The ingredient list is small but the flavor is big, especially when it is not overpowered by sugar-loaded sauces and spices. I love cooking  fish for dinner because it is easy and quick. Don’t limit yourself to salmon. This dish works well with seafood and other proteins. Try it with steak, chicken, or your favorite protein! Let me know how you like it. Enjoy!

 

Broc-choy

Ingredients:

1 head of broccoli (stem included)

1 large or 2 small bok choy

1/2 onion (red or yellow)

Let’s Do This!

Dice broccoli, bok choy, and onion ( I like to dice pretty small as you can see with the picture, it gives it more of a hash kind of feel)

Melt 2-3 TBS coconut oil or ghee and saute onion for  3-4 min, add broccoli &  saute for a couple min more,  then add bok choy.

Cook until soft around 10-15 min

Add S&P to taste

 

Avocado Cream Dressing

For the base of the dressing, I used this aioli.

I blended in extra lemon, lime and 1/4 avocado. Stir in fresh herbs such as cilantro and basil, taste and adjust S&P

 

Salmon

Ingerents:

8oz salmon filet (I like the skin on)

coconut oil

S&P

Let’s Do This!

Heat oil in a hot skillet to med-high until it is hot but not smoking

Salt and pepper salmon and when oil is hot place flesh side down, you should hear a sizzle

Allow to cook for 4-5 min. When the filet looks a little over halfway cooked (the flesh will be a lighter pink) flip and allow to cook for another 2-3 min until it looks just about cooked throughout. If you do not like the skin on, use a metal spatula and remove salmon just above the skin. It comes right off!

Transfer to plate and allow to rest for 1-2 min.

Place salmon on top of broc-choy add a dollop of cream dressing, garnish with fresh herbs and voila! An easy, delicious, nutritious, crowd-pleasing meal!

 

Notes:

The red sauce in the picture is Hot Mama Salsa, a hand crafted habanero  salsa from Portland, you can get their salsa at New Seasons or online. I love to have little dollops around my food for dips &  kicks 🙂

The broc-choy makes enough for 1-2 people, so adjust accordingly

If feeding a family or friends, it is probably more cost-efficient to buy a whole salmon filet
