Paleo Sugar-Free “Granola”

Wondering what to do for breakfast on a whole foods, sugar-free, or paleo diet? Try this high-protein granola! Made with a hearty blend of nuts and spiced with cinnamon and vanilla, this pantry staple will replace your formerly sugar-filled breakfast and will keep your energy up all day!

This “granola” is great to have on hand for when you are in a rush or need a snack!

Start with 3 cups of bigger sized raw  nuts. I use almonds, cashews, and pecans.  Place in food proccesser and pulse until nuts are smaller chunks.

Next, melt 4 TBSP of coconut oil in a pot. When melted add in chopped nuts (I also added 1/4 C pumpkin seeds), 1 tsp pure vanilla and 1 tsp cinnamon. Toss mixture around until evenly coated. 1420829024398

Once mixture is coated lay flat on baking sheet. Bake in oven on bottom rack at 300 degrees for ten minutes, stir and flip and bake for another 10.

Allow to cool then enjoy with unsweetened almond or coconut milk. Delish!

My recipe:

3 C of bigger raw nuts such as almonds, cashews and pecans

1/4-1/2 C smaller nuts such as pumpkin and/or sunflower seed

4 TBS coconut oil

1 tsp pure vanilla

1 tsp cinnamon

 

Place bigger nuts in food processor and pulse till chunky

Melt 4 TBS of coconut oil in pot, then combine all nuts, vanilla and cinnamon until evenly coated

Lay mixture flat on baking sheet

Bake for 20 min on 300 degrees turning and flipping granola half way

Enjoy a bowl with unsweetened almond or coconut milk

 

Notes: If using almonds, you might want to break them up in the food processor first as they are a bit harder and take a few extra pulses.
