Paleo Crockpot Whole Roasted Chicken And Gravy
Melt-in-Your-Mouth Paleo Roasted Chicken and Gravy
I would love to take credit for this chicken and gravy but I did not create this recipe! One of my favorite paleo food bloggers, Nom Nom Paleo, is the mastermind behind this delicious dinner. For the Cauliflower Mashers:
Remove stem and roughly chop the cauliflower. Add to a pot of simmering water and allow cauliflower to simmer until soft (around 10 min). I sometimes throw in a couple of peeled whole garlic gloves and blend at the end for a garlic kick! Strain water and transfer cauliflower to food processor. Add around 3TBS of butter and blend until smooth. Add more butter or a dash of veg/chk/beef stock if on hand to adjust the consistency.
Serve with your favorite vegetable and enjoy!!
Note: Leftover chicken is great to use for a tasty salad!
