Looking for a hearty, easy dinner that the whole family will love? Try this delicious one-pot meal!
Ingredients:
Around 1/3 C Full Fat Coconut milk
1 tsp red or green curry paste
2 cups frozen veggies
1/4 C cashews
1/2 avocado
fresh cilantro & basil
Let’s Do This!
Place coconut milk, curry paste and veggies into a pot on med heat.
After veggies begin to defrost (around 3-5 min) add cashews and simmer 2-4 min more. Transfer to bowl and add fresh avocado and herbs and

Notes: Serves around 1, I use Kirkland stir-fry vegetable blend and pick out the baby corn. Can use fresh chopped veg as well.
