Paleo Chocolate Chip Cookies

Chocolate chip was always my childhood favorite cookie….and still is. When I want the sweet nostalgic magic of a cookie, I make these! They are both delicious and healthy!

Paleo Chocolate Chip Cookies

Ingredients:

Wet:

3 eggs

1 ripe banana

8 TBS melted butter

3 TBS Maple syrup

½ C Almond butter

1 tsp vanilla extract

 

Dry:

1 ½ C Almond Flour

1 tsp baking soda

1 ¼ C chocolate chips (preferably Fairtrade 70%)

pinch of sea salt

Let’s do this!

Preheat oven to 350 degrees.

Combine all wet ingredients in a blender except melted butter. Blend on low until ingredients are well blended. Drizzle in the butter until all the wet ingredients are also blended into a smooth consistency.

In a medium-size mixing bowl, combine and mix dry ingredients (except chocolate chips).

Next slowly add the wet ingredients to the dry until it’s well combined.

Next stir in chocolate chips.

 

Spoon around a tablespoon and a half of the batter on a cookie sheet lined with parchment paper (around 8 cookies per sheet) and repeat with another cookie sheet.

 

Bake at 350 for 20 min. Cool on cooling rack and then enjoy!
