Cauliflower Coconut “Rice”

I love this recipe because stir-fries and curries just aren’t the same without the rice to soak up that yummy sauce. This cauliflower coconut rice is both super delicious and holds way more nutritional value than boring old rice. Nothing makes me more pleased than adding veggies on top of more veggies. Cauliflower Coconut “Rice”

Ingredients

  • 1 medium head of cauliflower, stem and florets chopped in quarter-sized chunks
  • 1⁄2 C unsweetened small coconut shreds
  • 1⁄4 C full fat coconut milk
  • 1 TBS raw unpasteurized honey
  • Pinch of salt

Let’s Do This!

  • Place chopped cauliflower in food processor in 3 to 4 batches and pulse each batch until cauliflower is like a “rice” consistency
  • In a cooking pot, add in honey and coconut milk and cook on medium-low until honey is melted
  • Add in the “rice” cauliflower to the pot and cover with lid to let the rice steam. Stir every few minutes to make sure that it does not burn on the bottom. Steam until “rice” is cooked and tender, around 10-15 min
  • Stir in coconut shreds and salt to your liking

Culinary nutrition expert notes: Cauliflower is part of the cruciferous family (as are broccoli, cabbage and kale) and contains powerful anti-cancer compounds known as glucosinolates. These compounds work to improve the body’s ability to detoxify and get rid of harmful chemicals and hormones. Boom! The cauliflower just bumped up its status to even more awesome!
