Roasted Red Bell Pepper Zucchini Hummus Recipe

Finding healthy snacks while on a whole foods or paleo diet can be a challenge. I wanted to create a snack that was incredibly healthy and delicious. This hummus did the trick! I love the idea of dipping veggies into more veggies! Another great thing about this dish is it’s super easy to make and keeps for days. Roasted Red Bell Pepper Zucchini Hummus

Ingredients:

5 small zucchini (around 3 ½ cups)

2 TBS of Tahini paste

1 12-ounce jar of fire roasted red bell peppers or 2 roasted bell peppers seeds and stems removed

2 minced cloves of garlic

Juice of one lemon

½ Cup avocado or olive oil

1 ½ tsp of cumin

Pinch of sea salt

 

Let’s Do This!

 

  1. Peel and chop zucchini and throw into a food processor (or blender if you don’t have a processor)

 

  1. Remove bell peppers from water, roughly chop and add to the food processor or add in 2 freshly roasted bell peppers seeds and stems removed.

 

  1. Add in the rest of the ingredients, reserving ¼ cup of oil.

 

  1. Start blending and slowly drizzle the remaining ¼ cup of oil. When all is incorporated, taste and adjust seasoning to your liking.

 

  1. Grab some cucumber slices, celery, carrots, or your favorite veggies and start dipping!

 

*Bonus Sidenote: Not a big fan of bell pepper or want to change it up? Add in a can of black olives instead (after draining) or try adding in spinach with a little more oil. The possibilities are endless! Let me know what you think. Cheers!
